‘26 Summer Seasonal Class
Our Summer Seasonal Class is built for peak warm-weather drinking. Think bright citrus, fresh herbs, soft florals, and that perfect balance of refreshing and a little bit elevated.
You’ll make two cocktails that highlight different sides of summer. One leans juicy and citrus-forward with layered lime, a touch of salinity to make everything pop, and a light, sparkling finish. The other brings in soft floral notes with elderflower, rounded out by sake for a smooth, almost silky texture, finished with bubbles and fresh mint for that crisp, garden-fresh feel.
As always, this is a hands-on class where you’ll learn how to build balanced cocktails from the ground up. We’ll cover muddling techniques, how to use salt to enhance flavor, and how to structure light, refreshing drinks that still feel intentional and complex.
For Hugo’s Sake
This one drinks like a bright, breezy spritz with a little extra personality. You get that fresh, juicy lime right up front, balanced by soft floral notes from the elderflower and a subtle, silky roundness from the sake. The Prosecco lifts everything with a light sparkle, while the soda keeps it crisp and super drinkable. The touch of saline pulls it all together, making the citrus pop and giving it that “why is this so good?” edge. Mint on the nose keeps it refreshing from start to finish.
For Hugo’s Sake
1/2 a juicy lime cut into pieces
1/2 oz simple syrup
1 oz Elderflower Liqueur
1 oz Sake
5 drops saline solution, or a pinch of salt!
Prosecco
Soda water
Garnish: Mint Sprig, dehydrated lime wheel
Instructions:
Add the lime pieces and salt solution in a highball glass and muddle thoroughly until all the juice is expressed. Add mint leaves and muddle gently. Next add simple syrup, liqueur, and sake, and top with ice. Agitate with the ice until everything is chilled and combined. top with soda water and stir once more to combine. Garnish with mint and a dehydrated lime wheel and enjoy!
*Mocktail edit! Replace the liqueur with Elderflower cordial and prosecco with N/A prosecco.

A rich, creamy holiday sour that tastes like winter comfort in a glass. Christmas in Heaven combines aged rum, Frangelico, pomegranate molasses, lemon, and egg white for a silky, cloud like texture. The flavors are warm, nutty, gently tart, and deeply festive. It is indulgent without being heavy and makes an unforgettable holiday centerpiece cocktail.

1 Egg white
¾ oz Fresh Lemon juice
¾ oz Honey Blueberry Syrup
½ oz Italicus Liqueur
1 1/2 oz Gin
Instructions:
Combine the egg white, lemon juice, syrup, Italicus, and gin in a shaker.
Perform a reverse dry shake: Shake first with ice, hawthorne strain (discard ice), then shake again without ice.
Fine Strain into a double old fashioned glass with a large cube of ice.
Express a lemon peel on top of the foam, then garnish with chamomile and blueberries on a skewer.

¾ oz Honey Blueberry Syrup
½ oz Lemon Juice
1 oz Earl Gray tea
1 oz Seedlip Grove 42
