INGREDIENTS:
6 fresh cherries (muddled)
¾ oz freshly squeezed lime juice
¾ oz Licor 43 (@licor43usa)
½ oz simple syrup (1:1)
1.5 oz gin
1 egg white
Garnish: raspberry powder using a stencil
Glass: coupe or sour glass
INSTRUCTIONS:
Muddle cherries thoroughly in a shaker until puréed.
Add lime juice, Licor 43, simple syrup, gin, and egg white.
Shake with ice for 10–15 seconds.
Strain into another vessel or clean tin, discard ice.
Shake again without ice (reverse dry shake) for 10–15 seconds.
Fine strain into a chilled glass.
Garnish with raspberry powder using a stencil for a striking finish.
